Gorgonzola is a superlative DOP blue cheese made from cow’s milk.
It is a Novara speciality and likewise has a long tradition.
It is being used more and more as a cheese that complements all kinds of dishes. Its forceful and unique personality lends a very individual nuance to many recipes – whether starters, main dishes or desserts.
In its piquant variant it combines ideally with well structured red wines, but also dessert wines.
If on the other hand it turns out to be the somewhat sweeter sort, Gorgonzola is to be preferred with somewhat smooth and savoury white and red wines.
