Gastronomic Specialties: Rice
Thanks to optimal conditions rice has been cultivated in the wet lowlands of Novara ever since the late fifteenth century.
Today, rice cultivation is the main pillar of support for the region’s agriculture.
Climate and nature have caused historical sorts to thrive over the centuries, including Arborio, Baldo, Balilla, Sant’Andrea and Vialone Nano; these were joined later by Ribe, Roma and Ariete, and most recently Riso Nero Venere.
Rice categories are classified according to grain size and cooking time into half-fine, fine and superfine.
